RECIPE 1
BLACK RICE BOWL WITH CRISPY VEGGIES TOFU & MISO DRESSING.
Make the dressing
Peel and finely chop ginger and garlic. Add to a blender together with miso, soy sauce, water, maple syrup and olive oil. Blend until smooth.
Bake the tofu
Preheat oven to 200C. Coat a backing tray with nonstick cooking spray. Cut the tofu into 1 inch cubes and pat the tofu dry with a paper towel. In a bowl, toss the tofu with 3 tbsp of the dressing. Spread them out in one later in the baking tray. Bake for 25 – 30 minutes, or until golden brown. Set aside.
Cook the rice
In a large saucepan over high heat, bring 600ml water and salt to a boil. Add the rice. Lower the heat and simmer, uncovered, for 25 – 30 minutes, or until the rice is tender. Taste some grains; they will still be slightly chewy. Drain in a fine-mashed sieve; set aside.
Cook vegetables
Bring a large saucepan of salted water to a boil. Add the asparagus and cook for 2 minutes. Add the sugar snaps and cook 1 minute more, or until the vegetables are tender but still a little crisp. Drain in a colander and rinse with cold water.
Slice vegetables
Thinly slice the radish and roughly chop the cilantro.
Finish and serve
Divide the rice among 2 bowls. Top each bowl with tofu, asparagus, sugar snaps, radish, cilantro and finish. Drizzle with the remaining dressing.
